From chef and creator of the popular food blog Domesticate-Me.com, 125 outrageously delicious yet deceptively healthy recipes for dudes (and the people who love them), accompanied by beautiful full-color photography. Dudes. So well intentioned when it comes to healthy eating, even as they fail epically in execution—inhaling a "salad" topped with fried chicken fingers or ordering their Italian hero on a whole wheat wrap (that makes it healthy, right?). There are several issues with men going on diets. First, they seem to be misinformed about basic nutrition. They are also, generally, not excited about eating "health food." You can lead a dude to the salad bar, but you can’t make him choose lettuce. Enter Serena Wolf—chef, food blogger, and caretaker of a dude with some less than ideal eating habits. As a labor of love, Serena began creating healthier versions of her boyfriend’s favorite foods and posting them on her blog, where she received an overwhelming response from men and women alike. Now, in The Dude Diet, Serena shares more than 125 droolworthy recipes that prove that meals made with nutrient-dense whole foods can elicit the same excitement and satisfaction associated with pizza or Chinese take-out. The Dude Diet also demystifies the basics of nutrition, empowering men to make better decisions whether they’re eating out or cooking at home. Better still, each recipe is 100% idiot-proof and requires only easily accessible ingredients and tools. With categories like Game Day Eats, On the Grill, Serious Salads, and Take Out Favorites, The Dude Diet will arm dudes and those who love them with the knowledge they need to lead healthier, happier lives—with flattened beer bellies and fewer meat sweats. The Dude Diet includes 102 full-color photographs.

The Sherpas of the Himalayas practice Tibetan Buddhism, a variety of Mahayana Buddhism. This is a general interpretation of Sherpa culture through examining the relationship between the Sherpas' Buddhism and other aspects of their society, and a theoretical contribution to the study of ritual and religious symbolism. In analysing the symbols of Sherpa rituals, professor Ortner leads us toward the discovery of conflict, contradiction, and stress in the wider social and cultural world. Following a general ethnographic sketch, each chapter opens with a brief description of a ritual. The ritual is then dissected, and its symbolic elements are used as guides in the exploration of problematic structures, relationships, and ideas of the culture. The author uses these rituals to illuminate the interconnections between religious ideology, social structure and experience. Professor Ortner analysis of the rituals reveals both the Buddhist pull toward exaggerating the isolation of individuals, and the secular pull that attempts to overcome isolation and to reproduce the conditions for social community.

“Olmsted makes you insanely hungry and steaming mad--a must-read for anyone who cares deeply about the safety of our food and the welfare of our planet.” —Steven Raichlen, author of the Barbecue! Bible series “The world is full of delicious, lovingly crafted foods that embody the terrain, weather, and culture of their origins. Unfortunately, it’s also full of brazen impostors. In this entertaining and important book, Olmsted helps us fall in love with the real stuff and steer clear of the fraudsters.” —Kirk Kardashian, author of Milk Money: Cash, Cows, and the Death of the American Dairy Farm You’ve seen the headlines: Parmesan cheese made from wood pulp. Lobster rolls containing no lobster at all. Extra-virgin olive oil that isn’t. So many fake foods are in our supermarkets, our restaurants, and our kitchen cabinets that it’s hard to know what we’re eating anymore. In Real Food / Fake Food, award-winning journalist Larry Olmsted convinces us why real food matters and empowers consumers to make smarter choices. Olmsted brings readers into the unregulated food industry, revealing the shocking deception that extends from high-end foods like olive oil, wine, and Kobe beef to everyday staples such as coffee, honey, juice, and cheese. It’s a massive bait and switch in which counterfeiting is rampant and in which the consumer ultimately pays the price. But Olmsted does more than show us what foods to avoid. A bona fide gourmand, he travels to the sources of the real stuff to help us recognize what to look for, eat, and savor: genuine Parmigiano-Reggiano from Italy, fresh-caught grouper from Florida, authentic port from Portugal. Real foods that are grown, raised, produced, and prepared with care by masters of their craft. Part cautionary tale, part culinary crusade, Real Food / Fake Food is addictively readable, mouthwateringly enjoyable, and utterly relevant.

How do you go from being an urban dag to a country boy without any experience of the bush? In 2008 Matthew Evans, one of Australia's most powerful food critics, stepped off the Sydney treadmill to farm 20 acres in Australia's southernmost shire. What is it really like to take the plunge, leaving a whole world of familiar people, places and work behind? How does it feel to use a cordless drill for the first time, to plant a vegetable garden, to milk a cow, to slaughter a chook for dinner? And what if a TV show is filming the whole process? This is the story of that transformation. The story of a life more in tune with the seasons and more connected to the soil. A life that is as rewarding as it is exhausting. The story of a family trying to turn a living from the noble and ancient art of growing things on the land.

Forty years after the publication of Rachel Carson's "Silent Spring," this important study examines the history, industrial uses, and harmful effects of the twelve most commonly used organochloride chemicals. All have been fully or partially banned by the Stockholm Protocol, an international treaty signed by about 120 countries in December 2000. Among the twelve are the dioxins (the active ingredient in Agent Orange) and polychlorinated byphenyls (PCBs), which are toxic in minute quantities. Johansen pays special attention to the Inuit of the Arctic, where these chemicals have been bio-accumulating to dangerous levels, moving up the food chain to a degree of toxicity that some Inuit mothers are no longer able to safely breast-feed their infants. The polar stratospheric ozone has been devastated by emissions of chlorofluorocarbons (CFCs), and new scientific findings connect global warming near the Earth's surface to significant cooling in the stratosphere. This synergy aggravates ozone depletion because the chemical reactions that destroy the ozone become more energetic as temperatures drop. Synthetic toxins have taken their toll on minority ethnic groups in the United States, and persistent organic pollutants have inflicted physiological damage on humans and other animals. Finally, Johansen explores the estrogenic effects of such chemicals. Sperm counts have declined as much as 50% in 50 years.

Is this true, and if so what can I do about it now?” Google these questions, and you’ll be overwhelmed with answers. The internet is rife with speculation and misinformation about the risks and benefits of what most parents think of as simply germs, but which scientists now call the microbiome: the combined activity of all the tiny organisms inside our bodies and the surrounding environment that have an enormous impact on our health and well-being. Gilbert and Knight, two of the top scientists leading the investigation into the microbiome—an investigation that is producing fascinating discoveries and bringing answers to parents who want to do the best for their young children. In order to truly understand food microbiology, it is necessary to have some experience in a laboratory. Food Microbiology Laboratory presents 18 well-tested, student-proven, and thoroughly outlined experiments for use in a one-semester introductory food microbiology course. Based on lab experiments developed for food science and microbiology courses at the University of Massachusetts, this manual provides students with hands-on experience with both traditional methods of enumerating microorganisms from food samples and "rapid methods" often used by industry. It covers topics such as E. coli, Staph, and Salmonella detection, as well as the thermal destruction of microorganisms, and using PCR to confirm Listeria monocytogenes. All parameters and dilutions presented in the text have been optimized to ensure the success of each exercise. An instructor's manual is also available with qualifying course adoptions to assist in the planning, ordering, and preparation of materials. This valuable text features well-established laboratory exercises based upon methods published in the FDA Bacteriological Analytical Manual. It provides the backbone for any laboratory session and may be customized with test kits to reflect the emphasis and level of the class.
